Southern Shells

As served on Amtrak's Silver Star, heading to Florida. Stuffed shells were flaccid, but the filling--pimento cheese lightened with ricotta--was, um, interesting in a school cafeteria sort of way. As autumn approaches, I'm going to play with this idea and try to create a truly appealing cross between stuffed shells and mac 'n' cheese.
